Hi everyone! I am very sorry I haven't posted in a long time! I have officially moved to Arizona! I have been trying to find food here, and it's been a little more difficult than I thought it would be. Back in Wisconsin, finding burrito shells was very easy. I could put meat, cheese, rice, etc in my burrito and get a lot of the foods I need in one meal... here, that is not the case. I have been struggling to find burrito shells without 'distilled monoglycerides' in them. Lately, I have been eating chicken and rice, as well as pasta, popcorn, corn, peas, yogurt, strawberries, blueberries, and eggs. I will be posting pictures of the foods I have found to eat down here soon. Recently, I found an article about how companies are trying to hide the fact that fructose is actually in your food by using different names for sugar. I plan on taking two years to finish my prerequisites for the Nuclear Medicine program, and then it will be another two years once I get into the program. A little bit about my trip down here... my family and I left Wisconsin on the afternoon of August 5th, and we drove to Nebraska the first night. On day two, we wanted to drive to Colorado Springs and visit Pikes Peak. I ended up getting sick from eating a muffin for breakfast, so we had to stop a little more than usual. We ended up getting to Colorado Springs a little late for Pikes Peak, so we figured we would stay in a hotel and see it in the morning. When we tried to get a hotel, we could not find one with an empty room... we started calling hotels further and further out and still could not find a room. It turns out, there was a Colorado convention going on that weekend and almost every hotel was completely booked. After driving and having three people call hotels to find a room, the first one we came across was Albuquerque, New Mexico... if you didn't know, that is about 5 hours south of where we wanted to be... we threw out the "Pikes Peak trip," and drove to Albuquerque. After arriving at our hotel at about 3am, (and driving for 16 hours), we passed out in the hotel. The next day, we got up and rode the tram at Sandia Peak in New Mexico. We then hit the road again, to finish our trip to Arizona. On our way, we got a call from our manager wondering if we'd be interested in looking at a condo (that we had previously put offers in on, but because of some complicated circumstances, didn't work out). We went to view it and put an offer in... they took our offer! So as of right now, I am staying in an extended stay, waiting for the condo to close! It's been a roller coaster of an adventure, but I absolutely love it here and I'm so grateful that I am able to have this experience and attend such a great school.
