I just wanted to post a quick update! I had my follow-up endoscopy last week for Eosinophilic Esophagitis... And I am in remission!! Remission simply means this disease will never go away on its own, but rather, the disease can be treated and symptoms of the disease will (hopefully) disappear. My EoE is currently undetectable, but there is no cure and without medication, it will come back. Eosinophilic Esophagitis (EoE) is a chronic immune system disease where eosinophils (a type of white blood cell) build up in the esophagus. These eosinophils can cause inflammation and injury to the esophageal tissue, eventually causing enough damage to impair swallowing and lead to food impaction. I have never personally had many symptoms, even when my esophagus was almost swollen shut... In fact, EoE was incidentally found through an endoscopy when I was having fructose issues. Although my symptoms weren't severe, treating this chronic condition was imperative to prevent permanent damage, such as scarring, narrowing, inflammation, perforation, and tears of my esophagus. While it's been a long road, I will be on a high dose of Omeprazole every day for the rest of my life... As long as it keeps working. Even though my EoE is in remission, one concerning finding in my endoscopy from last week was esophageal sloughing. I will still need to meet with the doctor and figure out the exact cause of this, but overall, my eosinophil count is finally down to zero! Although I will always have this condition, regardless of my eosinophil count, I can proudly say that for now, this is one less thing I will have to worry about. |

Hello all! I know I have not posted in YEARS, but I really haven't had any significant updates. I am still following my strict diet and when I cheat, I pay for it! I've been using my enzymes less lately and sticking more to the strict diet. I got the COVID vaccines in October and November 2021, followed by COVID-19 in December 2021 and many problems came up since. I got really sick from both vaccines and never recovered. I have been diagnosed with POTS, EDS, MCAS, and am being treated for my prior diagnosis of EoE since 2013. I will also be seeing an ENT next month due to ear issues I've experienced since COVID. These conditions have significantly affected my life. I was put on light duty at work for a few months due to POTS and have been put on many medications because of these conditions. Corlanor is significantly helping my POTS, while Cromolyn, Claritin, and Pepcid are helping with MCAS. I do feel like Cromolyn may be helping my gut heal, as I've been much less bloated and had less issues eating recently. For EoE I was prescribed a high dose of Ompeprazole and have an endoscopy coming up to track it's effectiveness next month. Good news! As long as you find a supplement with xylose isomerase in it, you should be fine. Amazon sells the above enzymes. The Eat Anything supplement will help aid in the digestion of fructose, while the Rainbow Light Advanced Enzyme will help with things like sugar alcohols. Hi everyone! I'm sorry I took a (very) long break from posting, but I was finishing Nuclear Medicine school and I just graduated! The past few months of coronavirus have taught me a lot about cooking, so I'll be posting a lot of recipes! Since everyone can tolerate different things, feel free to substitute things you can have.
